Spelt and Currant Soul Cakes
Nutty spelt flour and dried currants in a lightly sweetened "cake" to share with Samhain visitors.

plus extra for sprinkling on top

vanilla extract

spelt flour

salt

baking soda

nutmeg

tsp
cinnamon
1/2
cup
milk
1/2
cup
dried currants
Instructions
Preheat oven to 400F
Whip butter and sugar together
Add egg and vanilla; combine until smooth.
Add milk
Add spelt flour, baking soda, cinnamon, nutmeg, and salt. Mix until smooth.
Fold in dried currants.
Spoon into quarter-cup portions onto baking tray. Lightly sprinkle tops with sugar.
Bake for 15 minutes or until lightly browned on the bottoms.
